It’s been a long time

I just got done teching the Full Monty, so baking has a been a bit lax. I did make some pretty awesome granola that has been keeping me going every day.

Granola!

6-7 cups old-fashioned rolled oats
1-2 cups “other goodies”–nuts, seeds, etc.
1/2 cup maple syrup or honey
1/4 cup oil (I use canola)
1/2 teaspoon salt
dried fruit, chocolate, etc.

1.        Preheat the oven to 250 degrees F. Add oats and other goodies to large bowl. Add oil and maple syrup or honey to measuring cup Add salt to liquids and pour over dry ingredients. Mix well.

2.        Spread oat mixture on sheet pan in a somewhat even layer. Bake for 2 hours or until dry and toasted, stirring occasionally. Let cool, then add dried fruit and/or chocolate Store in an airtight container (an old oatmeal canister works fine for short-term).
