Mmmmm Holiday Cookies

Happy Valentines/Singles Awareness/ Sexy Rumpus Day (that one’s Neil…) In honor of the day, I’m making Red Velvet Cookie Sandwiches. I’m not completly done with them yet, just got them off the rack but now I’m waiting for the dish washer to stop so I can get the mixing blade out of it. They look good so far…a little crunchy on the outside and soft in the middle. Word to the wise, the recipe calls for using parchment paper on the cookie sheets, use it. I didn’t and they stuck a little bit. Not a bunch, I didn’t loose any, but still, good idea to use it. Here’s the recipe! (from

Red Velvet Cookie Sandwiches

makes about 2 dozen cookies, or a dozen cookie sandwiches

1 Red Velvet Boxed Cake Mix
6 tablespoons butter, melted and cooled
2 eggs
zest from 1 small lemon

Mix all ingredients until well blended.  Scoop onto a baking sheet lined with parchment paper and bake at 375 degrees for about 12 minutes or until the cookies are set.

Cook them through until they are no longer doughy.

Cream Cheese Filling

4 ounces cream cheese, at room temperature
4 tablespoons butter, at room temperature
3 cups confectioners’ sugar
1 teaspoon vanilla extract
1-2 tablespoons milk (more or less)

Cream until smooth and creamy. Scoop a nice amount onto the bottom of a cookie and place another cookie on the frosting to make a sandwich.
