Because I’ve been trying to save money, I haven’t been eating out very much lately. The other day I got this HUGE craving for a Noodles and Company dish, so I decided to make it at home. Because I’ve been trying to eat healthy, all my ingredients are fresh in stead of frozen. Enjoy!

1 tomato
1/2 large onion
Fresh Spinach, as much as you want
1 box of whole grain pasta
2 cloves of garlic
Sea Salt to taste
Fresh pepper to taste
Olive oil
Feta Cheese, crumbled

  1. Heat up a frying pan with olive oil, salt and pepper. Dice the onion and garlic and sautee them. Start water to boil.
  2. Dice the tomato and set aside.
  3. Once the onions have started to turn clear, turn the heat off but don’t move the pan. When the pasta is al diente, drain it and add to the onion and garlic mix with more olive oil, salt and sugar. Add tomato and spinach and stir in, but don’t cook the spinach all the way.
  4. Serve the pasta, top with feta cheese. Enjoy!
