Today for some weird reason, I woke up really wanting a fritatta. The weird part about it is that I’ve never had one before, so why would I want it? Either way, I decided to make one anyway. Neil gave ma an Alton Brown recipe and I used that as a starting point, and what I came up with is pretty tasty.

6 eggs, beaten
1-3 oz grated 4 cheese Italian blend
Black pepper to taste
Salt to taste
Butter for pan
Red pepper, chopped
2 cloves garlic, chopped
few handfuls of fresh spinach

  1. Mix eggs, cheese, pepper and salt in a bowl.
  2. Melt butter in an oven safe pan and saute peppers and garlic until fragrant.
  3. Mix in egg mixture with a rubber spatula and mix spinach on top of that.
  4. When the mixture is starting to firm, top with oregno and put in the oven on the broiler setting for a 3 mins or until it is light and fluffy.
  5. Cut and serve right away.
