For some reason today, I had a craving to make fish. At first, I thought about making cilantro lime fish, but I changed my mind and made almond encrusted catfish filets with a side of cilantro lime rice. They were really good! Since I made up these recipes, there aren’t exactly good measurements for everything, so just take everything at face value. You can always change around the amounts to suit yourself.

Almond Encrusted Catfish

4 lbs cut almonds
1 cp Panko Breadcrumbs
1/2 cp parmasean cheese
Salt, Pepper, and Garlic Powder to taste
3 eggs
3 catfish filets

  1. Put the almonds, Panko and cheese into the food processor. Pulse just until the almonds are roughly cut. Add seasonings and put in a shallow dish.
  2. Whisk the eggs in another shallow dish. Dip each filet into the eggs then roll them in the almond mixture, covering fully. Place each on a cookie sheet covered in foil. Bake for 15 mins at 425, or until the center is pink.

Cilantro Lime Rice

2 cps brown rice
4 tbsp lime juice
2 tbsp cilantro (you want fresh, but the store was out, so I used dry)
Splash of Jose Cuervo (Opt)
Salt to taste

  1. Cook the rice until finished. Drain the water, saving just a little bit. Add the lime juice and Jose and mix in the pot. Add the cilantro and salt, mixing well. Make sure to taste it to see if you have it just the way you want it!
