Rum ChaChaCha

In the past few months, Rum Chata as become very popular in this area. It’s HorChata with spiced rum mixed in and tastes a lot like the milk in your bowl after eating Cinnamon Toast Crunch cereal. Saturday, one of my friends said something about making Rum Chata cupcakes and I thought, what about Rum Chata cheesecake bites? I gave in and made them today, and let’s just say, I’m pretty damn good. Now, just a warning, this is a non bake cheesecake, so the alcohol is still in it. If you want to make it so kids can eat it, substitute the Rum Chata for HorChata, it has the same flavor without the alcohol content.

Rum Chata Cheesecake Bites

Soft tortillas, cut to fit into a muffin tin1 Tbsp butter, melted
1/2 Tsp cinnamon
1/2 Tsp brown sugar
8 oz cream cheese
1/3 cup brown sugar
1/4 cp heavy cream
1/4 cp Rum Chata
1 tbsp vanilla

  1. Place the tortillas in the bottom of a muffin cup in the tin, brush with the melted butter mixed with the cinnamon and sugar. Put in the oven at 300 for about five minutes. Pull them out and thrown them in the freezer to cool them down.
  2. Mix the cream cheese and remaining sugar until combined. Add cream, Rum Chata and vanilla and mix until creamy. Put in the prepared crusts and put them back in the freezer for about an hour.
