Sweet Leather

Every few weeks I get a bunch of fruit to cut up and divide into bags for my smoothies. Last week I got a TON of fruit and had some left over. The apples I ate for breakfast, but I also had some mangoes left over. I like mangoes, but I always have a hell of a time trying to cut them so they aren’t terribly messy. I’d seen fruit leather a bunch of times online and decided to give it a try. I cooked it a little too long so some of my leather is a little crunchy on the edges, but it’s actually really good. I mixed it with blueberries so it has a cool speckled color.

This recipe is mostly sitting around and waiting for the leather to be cooked. Prep takes about five minutes. The result is a very sweet, and mostly healthy version of fruit roll ups. While dehydrating fruit makes it almost 100% sugar, it is still a lot better than all the chemicals you get off the grocery shelf.

Mango Blueberry Fruit Leather

Here’s what to get from the store:

Mango Blueberry Fruit Leather

2 Mangoes, diced
1/2 pint blueberries

  1. Put the mangoes and blueberries in a blender and blend until smooth. Spread onto a sided baking sheet that is either oiled with coconut oil or lined with parchment paper. (I should really buy parchment paper)
  2. Cook at 175 degrees in the oven for about 2 to 3 hours, checking after about 2 hours to see if it’s cooked. If the outside is cooked but the rest isn’t, cut the cooked part and put it aside (which I didn’t do)

Everyone says it takes a long time to see results from working out. Well, 5 months after I started, I can finally see my legs reshaping themselves, my arms are HUGE, and my abs are slowly starting to come out of hiding. Being impatient is normal when you first start, but making yourself work even when you don’t want to will give you results.
